Ingredients and spices that need to be Get to make Kasuri Pomfret Masala:

  1. 6 pcs pomfret fish
  2. 4 tbsp onion paste
  3. 4 tbsp ginger, garlic & green chilli paste
  4. 4 tbsp tomato paste
  5. 1 onion, medium (sliced)
  6. 1/2 pc capsicum (sliced)
  7. 1 tsp kasuri methi leaves
  8. 1 tsp ghee
  9. 1 tbsp lemon juice
  10. 1 tsp turmeric powder
  11. 1 tsp kashmiri red chilli powder
  12. 1 tsp coriander powder
  13. 1 tsp garam masala powder
  14. To taste salt (to taste)
  15. 100 ml mustard oil

Steps to make to make Kasuri Pomfret Masala

  1. Marinating fish At first, cut long slits both side of the fish. You may cut more slits that depends on size of the fish and depth of the slits. Add salt, turmeric powder, kashmiri red chilli powder & lemon juice. Apply it all over the body while massaging the fish. Keep it for 10 mins.
  2. Sauté vegetables On another pot, take small amount of mustard oil, sauté the sliced capsicum and sliced onions. Once capsicum is half sautéed then add sliced onions. Make sure that it remains crunchy. Keep it aside to use it later. I have used three colours of capsicum, but you are free to use one or more than one colour, which is based on your preferences and availability of different colours of capsicums.
  3. Fry fish In the same pot add some more oil, heat the oil and fry both sides of the fish. Keep aside the fried fish.
  4. Make a gravy In the same oil, add onion paste, ginger, garlic and green chilli paste and tomato paste and fry until the raw smell went off. Then add turmeric powder, kashmiri red chilli powder and coriander powder. Fry it until oil is surfaced; further add water to make it gravy. Amount of water depends on the thickness of the gravy. Cover it for 5 mins for fast boiling of the gravy.
  5. Add fish.Once the gravy start boiling, put the fish in the gravy and cover it for 10min to cook the fish. After 10 mins, please check that the fish is soft or not. Generally, pomfret doesn’t take long time to cook. Add garam masala powder, shake the gravy gently to mix the garam masala powder with the gravy. Don’t turn the fish as the fish is soft at this point. At this moment low stove flame.
  6. Temper (Tadka) To give a tadka to the gravy, take another pan, add some ghee, heat the ghee, and put some kasuri methi leaves. Heat the leaves until nice aroma comes out. Spread the tadka evenly over the gravy. Sprinkle the sautéed vegetables over the gravy, but keep some for garnishing. Switch off the gas flame and cover it for 5 mins.
  7. The dish is ready to serve. Garnish the dish with sautéed vegetables on a plate. It can be served with steam rice.
